Antal Novotny, owner of Katlan Tóni Kultúrkonyha, has always dreamed about a place where food has real value, eating is magic, a ritual, and sharing food is a real gift. He found an old steam mill, and restored it to open his “culture kitchen”. He wants to promote the culture of eating in Eastern Europe, old recipes and traditions, with a modern twist. This is the mission of the restaurant – help the old and the new to finally meet and make people proud of how and what they eat.
The essence of Katlan Tóni Kultúrkonyha? Exciting, multidimensional, authentic, full of life, and umami. These are the ingredients of his famous chicken broth. But as Toni puts it “everyone can throw ingredients in a pot and cook something. It is not only about that, it’s about the experience. Good food and good hospitality is our love language and this is what we give to everyone who dines with us.”
